Easy, Peasy, Cheesy Weeknight Dinner

Sometimes I get lazy when it comes to cooking during the week.  Don’t we all?  After a long day of work, commuting and arguing in some cases, all you want to do is relax.  And then dinner time hits…dum dum dum! Well, last week we were doing some grocery shopping knowing that it was going to be a long week, so we decided to take a chance on what I call an adult macaroni and cheese.  This pasta is made out of lentils!  DSC_0273

With 19g of protein for one serving, we had to take a chance on it.  It didn’t hurt that it said cheddar and broccoli too 🙂

To amp it up a bit and not just have lentils for dinner, we decided to roast our own broccoli as well.  I set the oven for 425, tossed the broccoli with olive oil, some salt and pepper, and baked those little florets for about 19 minutes until they were crispy and ripe for consuming.


While the broccoli was roasting, I made the pasta.  Literally just followed the directions on the back of the box and it took about 10 minutes.  When the pasta was done, all I had to do was put in some milk, butter and the cheesy mixture and poof! Insert broccoli and you have a protein packed, healthyish dinner.

I kid you not, this pasta was wonderful.  Different than normal pasta in the sense that it actually had more flavor, and you could tell that they used real cheese in their cheese mixture.  Not to dismiss Kraft macaroni and cheese as that’s also delicious, but this dish was far healthier.

I can’t wait to try the other flavors that modern table has as this lentil pasta is our new fav! Oh! And being an avid mac and cheese eater, one trick I have is to use hot sauce when all is said and done.  Sounds gross, I know, but give it a shot if you like spicy things, I promise you won’t regret the cheese/hot sauce combo!
